These adorable Bunny Cinnamon Roll Bites transform store-bought cinnamon rolls into a festive Easter treat. With a unique cream cheese icing enhancement and charming candy melt ear details, they're incredibly easy, fun for kids, and perfect for a memorable holiday breakfast or brunch.

Ingredients
  

  • 1 (5 count) can Jumbo or Grands! store-bought cinnamon rolls with icing
  • Easter colored sprinkles
  • Easter colored M&M’s
  • 2 oz softened cream cheese for icing enhancement
  • ½ tsp vanilla extract for icing enhancement
  • a few pink or white mini candy melts for ear detail

Method
 

Step 1: Preheat & Prep.
  1. First, preheat your oven according to the directions on your can of cinnamon rolls, usually 350-375°F. Then, line a baking sheet with parchment paper to ensure easy cleanup and prevent sticking.
Step 2: Shape the Bunnies.
  1. Separate the cinnamon rolls from the can. Take one cinnamon roll and gently pull the outer end out and up to form one bunny ear, then repeat for the second ear. Press down firmly between the two bunny ears and along the outsides of the ears to secure them to the round part of the cinnamon roll.
  2. Transfer your shaped bunny to the prepared baking sheet. Before baking, gently press a few pink or white mini candy melts into the base of the shaped ears for a subtle 'pink inner ear' effect.
Step 3: Initial Bake & Reinforce.
  1. Place the baking sheet in the preheated oven and bake according to the package directions. Halfway through baking, carefully remove the tray from the oven. Use the handle of a spoon or your warm hands to gently reinforce the bunny ear shapes, pressing them back into definition if they have started to spread.
Step 4: Finish Baking & Icing.
  1. Return the bunny cinnamon rolls to the oven to finish baking until they are beautifully golden brown and set in the center. Once baked, remove them from the oven.
  2. While still warm, prepare the icing. Whisk in 2 oz of softened cream cheese and 1/2 tsp of vanilla extract into the canned icing for a richer, tangier, and thicker cream cheese frosting. Drizzle this enhanced icing generously over the warm bunny cinnamon rolls.
Step 5: Decorate & Serve.
  1. Immediately after drizzling the icing, sprinkle your bunny cinnamon rolls with festive Easter colored sprinkles. Then, add two round candies like M&M’s for the eyes and one for the nose. Serve your Bunny Cinnamon Roll Bites warm for the best taste and texture.
