My go-to Blueberry Energy Bites are the ultimate solution for on-the-go nourishment, packing flavor and nutrition into every bite. With a special "bakery-style" twist from finely ground toasted oats and a hint of cardamom, these no-bake treats boast a comforting, cake-like crumb and an irresistible aroma, perfect for a healthy, satisfying snack.

Ingredients
  

What You'll Need
  • 2 cups nuts (I used 1 cup of cashews & 1 cup of almonds)
  • 1 cup Medjool dates pitted
  • 1 cup dried blueberries
  • 1 ½ tsp vanilla extract (or seeds of 1 vanilla bean)
  • 1 lemon zest of
  • ¼ tsp sea salt
  • ¼ cup finely ground toasted rolled oats
  • tsp ground cardamom

Method
 

Prep the Oats
  1. Lightly toast your rolled oats in a dry pan over medium heat for a few minutes until fragrant and lightly golden. Keep an eye on them to prevent burning.
  2. Once toasted, transfer the oats to your food processor or a spice grinder and process until they are finely ground, almost like flour. Set these aside for later.
Process Nuts
  1. Add your chosen nuts (cashews and almonds work wonderfully) to the food processor. Pulse them in short bursts until they are broken down into pea-sized bits, avoiding over-processing into nut butter.
Combine & Initial Process
  1. Now, add the pitted Medjool dates and dried blueberries to the food processor with the nuts. Process all these ingredients together for about 1-2 minutes until the mixture looks crumbly but cohesive, becoming slightly sticky.
Add Flavorings & Twist
  1. Add the vanilla extract (or vanilla bean seeds), lemon zest, sea salt, the finely ground toasted oats, and the ground cardamom. This ensures even distribution and preserves delicate aromas.
Final Processing
  1. Continue to process the mixture, scraping down the sides of the food processor bowl every minute or so. Process until all ingredients have fully broken down and form one large, sticky ball that pulls away from the sides of the bowl. This typically takes about 3-5 minutes of continuous processing.
Roll & Store
  1. Once your mixture is ready, roll it into small, uniform balls. Wetting your hands slightly with water or a tiny bit of coconut oil can prevent sticking. A small cookie scoop helps achieve consistent sizes. (It's normal for your hands to feel a bit greasy from the natural nut oils.)
  2. Store your finished Blueberry Energy Bites in an airtight container in the fridge for up to 2 weeks, or in the freezer for several months for longer-term meal prep.
