  • Assorted jelly beans (various colors)
  • Food coloring (blue, yellow, green)

  • Cupcake liners
  • Mixing bowls (small and large)
  • Electric mixer (handheld or stand mixer, optional but helpful)
  • Piping bags (disposable or reusable)
  • Assorted piping tips: #1 (fine writing), #4 (medium writing), #12 (round filling), #65 (leaf), #233 (grass) or similar tips you own
  • Toothpicks
  • Small round paper punch (1.5-inch recommended)
  • Scotch tape

Method
 

Prepare the Cupcakes
  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
  2. Prepare your cupcake batter, whether using a box mix or your favorite from-scratch recipe. Fill each liner about two-thirds full with batter.
  3. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean and the tops are lightly golden and set.
  4. Transfer the baked cupcakes to a wire rack and let them cool completely before frosting.
Decorate the "Baby Birds in Nest" Cupcakes
  1. First, frost your cooled cupcake with chocolate frosting.
  2. Next, using piping tip #233 (or a similar grass tip) and chocolate frosting, pipe a circular nest shape around the top edge of the cupcake.
  3. To create the baby bird bodies, squeeze three round dollops of blue frosting with tip #12.
  4. For their tiny beaks, use tip #65 with yellow frosting.
  5. Finally, use tip #1 (a fine writing tip) and chocolate frosting to dot small eyes on each bird.
Decorate the "Nest with Eggs" Cupcakes
  1. Begin by frosting these cupcakes completely with chocolate frosting.
  2. Using any writing tip (#1 or #4 is good, or the #233 grass tip), pipe a simple circular outline on top to form a nest-like string or texture. If using a #233 tip, gently squeeze a circle of chocolate frosting to create a fluffy, grassy nest.
  3. Next, carefully place 2-3 colorful jelly beans inside the nest, resembling tiny eggs.
Decorate the "Happy Spring Grass" Cupcakes
  1. Lightly tint a portion of your white frosting with green food coloring to create a pale green shade.
  2. Frost the entire surface of these cupcakes with this light green frosting.
  3. To make darker grass sprigs, add a little more green dye to any remaining light green frosting.
  4. Fill a piping bag with this darker green frosting and use a writing tip (#4 or similar) to pipe small, upright sprigs of grass all over the cupcake top.
Decorate the "Sunshine Flower" Cupcakes
  1. Tint a portion of your white frosting a bright yellow.
  2. Using a round tip (or even just snipping the corner of a piping bag), pipe the yellow frosting onto the cupcake in a swirling motion from the center outwards, creating the look of petals.
  3. Place one jelly bean directly in the center of the yellow swirl to complete your cheerful sunshine flower.
Make "Happy Spring" Toothpick Signs
  1. Open a word processing document on your computer.
  2. Type "Happy Spring" repeatedly in a pleasing green font. Print out one sheet of these words.
  3. Use a 1.5-inch round paper punch to cut out individual "Happy Spring" circles.
  4. Securely tape each circle to the top of a toothpick.
