Ingredients

  • 6 cups low-sodium chicken broth
  • 1-inch piece fresh ginger thinly sliced
  • 1 minced garlic clove
  • 20 mini frozen wontons (Chicken Cilantro from Trader Joe’s is a great choice!)
  • 1 ½ cups sliced shiitake mushrooms
  • 4 baby bok choy halved lengthwise and halved
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • Scallions sliced green parts only, for garnish

Equipment

  • A large pot or Dutch oven
  • A sharp knife
  • A sturdy cutting board
  • Measuring cups
  • Measuring spoons

Method

Preparation Steps
  1. Prepare the ginger and garlic by peeling and thinly slicing the ginger, then mincing your garlic clove.
  2. Wash the baby bok choy thoroughly under cold running water. Halve each piece lengthwise, then halve again to create smaller, manageable pieces.
  3. Slice your shiitake mushrooms. You can remove the tough stems if preferred, though they are usually tender enough when thinly sliced.
Cooking Instructions
  1. Bring the chicken broth to a rolling boil in your large pot or Dutch oven over medium-high heat.
  2. Gently smash the sliced ginger with the side of your knife or a flat object to release its essential oils and maximum flavor. Add the smashed ginger and the minced garlic to the boiling broth. Cover the pot and allow it to simmer for 5 minutes, letting the flavors meld beautifully.
  3. Add the prepared bok choy to the simmering broth. Cook for about 5 minutes, or until the bok choy begins to become tender-crisp and vibrant green.
  4. Next, carefully add the frozen wontons and the sliced shiitake mushrooms to the pot. Stir gently to ensure they are submerged in the broth. Continue to simmer for 2 to 3 minutes, just until the wontons are thoroughly heated through and cooked, and the bok choy is perfectly tender and slightly wilted.
  5. Remove the pot from the heat. Stir in the soy sauce and the sesame oil. Taste the broth and adjust seasonings if necessary, adding a pinch more soy sauce or a tiny bit of salt if desired.
  6. Divide the hot wonton soup evenly into four serving bowls. Garnish each bowl generously with fresh, sliced green scallions. Serve immediately and enjoy your homemade creation!

Notes

For the best wonton soup, always smash ginger slices to unlock their aroma and avoid overcooking wontons and vegetables to prevent mushiness. Adjust seasoning to taste with soy sauce, sesame oil, or a pinch of salt. Store broth separately from cooked wontons to prevent sogginess; refrigerate for 3-4 days or freeze broth for up to three months. Customize by adding cooked shrimp, chicken, tofu, chili oil, or quick-cooking noodles.
