Ingredients

  • 3 cups Chex , rice or corn
  • 2 cups Cheerios
  • 2 cups pretzel sticks , broken in half
  • 1 cup Valentine M&M's , more if desired
  • 10 ounces white chocolate , I used Ghirardelli wafers
  • 1.5 teaspoons refined coconut oil or vegetable shortening
  • heart sprinkles , optional

Equipment

  • Large bowl
  • Rubber spatula
  • microwave-safe bowl
  • Parchment paper

Method

Combine the Dry Ingredients
  1. First, grab a large bowl. Gently pour in your Chex cereal, Cheerios, broken pretzel sticks, and about half of your Valentine M&M's. Stir everything with a rubber spatula or your hands until well combined.
Melt the White Chocolate with the Secret Ingredient
  1. Place your white chocolate (like Ghirardelli wafers) into a microwave-safe bowl. Add 1-2 teaspoons of refined coconut oil or vegetable shortening to the bowl. Microwave at 50% power for 1 minute, then stir well. The chocolate won't be fully melted yet.
  2. Continue to microwave in 30-second increments, stirring thoroughly after each interval, until the chocolate is completely smooth and silky with no lumps. Be careful not to overcook, as white chocolate can burn or seize easily.
Coat the Mix Evenly
  1. Once the white chocolate is smooth and melted, pour it directly over the cereal and pretzel mixture in your large bowl. Use a sturdy rubber spatula to gently and thoroughly stir everything until every piece is well coated. Immediately after stirring, add the remaining Valentine M&M's and heart sprinkles if desired, ensuring they stick while the chocolate is still wet.
Set and Harden
  1. Spread your freshly coated Valentine Chex Mix evenly onto a piece of parchment paper, as thinly as possible to prevent large clumps. Allow the mix to set at room temperature for at least 15 minutes, or until the white chocolate is completely hardened and crisp.
  2. If you're in a hurry or in a humid environment, you can place the parchment paper with the mix into the refrigerator for about 10-15 minutes to speed up the setting process. Once set, break it into delicious, bite-sized clusters and enjoy!
