Method
- Place all the pancake batter ingredients into your blender, except for the eggs and coconut oil. Blend until the oats are fully ground and the mixture is smooth and well combined.
- Crack the two large eggs into the blender. Pulse a few times just until incorporated. Do not overmix.
- Heat a large griddle or pan over medium heat. Add coconut oil and let it melt to prevent sticking.
- Pour about 1/4 cup of batter for each large pancake (reindeer head), smaller ones for noses, and ovals for ears. Cook until golden brown on both sides, about 2 minutes per side.
- Cook the bacon separately until crispy. Drain on paper towels.
- Assemble reindeer: place 2 bacon strips as antlers, 2 small pancakes as ears, large pancake as head, smaller one as nose, blueberries for eyes, and halved cranberry for the nose.

Notes
Use any type of milk, including dairy or plant-based. Oats can be swapped with all-purpose or whole wheat flour. Get creative with decorations try chocolate chips or raspberries! Store-bought mix can be used if you're short on time.
