  • 1 tablespoon honey
  • 4 cloves garlic (minced)
  • 1 1-inch piece fresh ginger (peeled and grated)
  • 1 tablespoon cornstarch
  • ½ tablespoon sesame oil
  • 1 pound ground beef (93% lean)
  • ½ medium yellow onion (chopped)
  • 1 large head broccoli (cut into florets and blanched*)
  • 1 tablespoon toasted sesame seeds
  • 3 medium scallions (sliced on the bias)

Method
 

1. Prepare the Flavorful Sauce
  1. In a small bowl, whisk together the reduced sodium soy sauce, honey, minced garlic, grated fresh ginger, and cornstarch. Whisk until the sauce is completely smooth, ensuring no cornstarch lumps remain. Set this aside.
2. Cook the Tender Ground Beef & Onion
  1. Add the sesame oil to a large deep skillet or a wok over medium-high heat. Once shimmering, add the ground beef and chopped yellow onion. Allow the beef to sear undisturbed for a minute before stirring. Cook, breaking up the beef and stirring occasionally, until the meat is crumbly, golden brown, and just about cooked through with no pink remaining (about 5 minutes). The onion should be fragrant and softened.
3. Combine with Sauce & Broccoli
  1. Once the beef is cooked, pour in the reserved sauce mixture. Stir everything together well, making sure to coat the beef evenly. As it heats, watch the sauce thicken and become glossy (about 1 minute). Add your blanched* broccoli florets. Cook for just 1 more minute, tossing to combine, allowing the broccoli to heat through and turn a vibrant green while remaining perfectly crisp-tender. *Remember to blanch your broccoli beforehand for the best results – see my Pro Tips for details on how to do this perfectly.
4. Layer for Serving
  1. Divide the flavorful Ground Beef & Broccoli Stir Fry mixture evenly among 4 plates or shallow bowls. If using, create a base by layering cooked rice or cauliflower rice first, then spooning the stir-fry over the top.
