  • ½ tbsp tamari
  • 1 garlic cloves, peeled and finely grated
  • 1 tbsp sriracha sauce (for chicken)
  • 15 g greek yogurt
  • ½ tbsp mayo
  • 2 tsp sriracha (for dressing)
  • ¼ cauliflower, riced (150g)
  • 1 pak choi, leaves separated and finely sliced
  • 25 g edamame beans, defrosted
  • 25 g kimchi
For the Quick Pickle
  • thinly sliced cucumber
  • radish
  • splash rice vinegar
  • tiny pinch sugar
For the Finish
  • toasted sesame seeds
  • drizzle toasted sesame oil

Method
 

Marinating the Chicken for Flavor
  1. In a bowl, combine the 1cm chunks of boneless, skinless chicken thighs with ½ tbsp tamari, 1 finely grated garlic clove, juice of 1⁄4 lime, and 1 tbsp sriracha sauce. Toss everything together to ensure the chicken is well coated.
  2. Let it marinate for at least 30 minutes to infuse the chicken with flavor and keep it tender.
Crafting the Creamy Sriracha Dressing
  1. While the chicken marinades, prepare your dressing. In a small bowl, whisk together 15g Greek yogurt, ½ tbsp mayonnaise, and 2 tsp sriracha.
  2. Set the creamy, spicy dressing aside.
Preparing Your Vibrant Veggie Base
  1. In a large bowl, combine ¼ riced cauliflower (150g), 1 pak choi (leaves separated and finely sliced), 25g defrosted edamame beans, and 25g kimchi.

  1. Heat a skillet over medium heat (aim for 375-400°F / 190-200°C).
  2. Once hot, add the marinated chicken, scraping all the marinade into the pan.
  3. Cook for about 5 minutes, stirring occasionally, until the chicken is white throughout and beautifully seared. Ensure it reaches an internal temperature of 165°F (74°C) for food safety.
Assembling Your Bowl & Adding the Unique Twist
  1. While the chicken cooks, prepare your quick-pickled cucumber and radish salad. Thinly slice some cucumber and radish, then toss them in a small bowl with a splash of rice vinegar and a tiny pinch of sugar.
  2. Let this sit for 10-15 minutes to allow the flavors to meld and the vegetables to slightly soften.
  3. Once the chicken is cooked, pull your chilled veggies out of the fridge and top them generously with the hot, seared chicken.
