Method
1. Prepare Your Mix Base
- In a very large mixing bowl, combine the Chex cereal, Lucky Charms cereal, pretzel sticks, extra cereal marshmallows, and green M&Ms. Toss everything gently to ensure an even distribution of all the components.
2. Craft the Golden Brown Butter
- In a small saucepan, melt 2-4 tablespoons of unsalted butter over medium heat. Stir occasionally. The butter will foam, then milk solids will start to separate and brown at the bottom. Continue cooking until the butter turns a rich golden-brown color and smells nutty and caramelized. Immediately remove from heat.
3. Melt the White Chocolate with Brown Butter Infusion
- Carefully pour the warm brown butter, including all browned solids, into a heatproof bowl with your white chocolate. Melt the chocolate using a double boiler method (over a simmering pot of water, ensuring water doesn’t touch the bowl) or microwave in short 30-second bursts, stirring well after each interval, until smooth and fully melted.
4. Combine & Coat
- Pour the luscious melted brown butter white chocolate over your prepared cereal mix. Grab a sturdy spatula and gently but thoroughly stir the mixture, ensuring every component is evenly coated without crushing the delicate cereals and pretzels.
5. Harden & Set
- Spread the coated snack mix evenly in a thin layer onto two large sheets of parchment paper placed on baking sheets. Allow it to harden completely either at room temperature (1-2 hours) or for a faster set, pop it into the refrigerator (30-45 minutes).
6. Break & Enjoy!
- Once fully hardened and firm, break the Leprechaun Bait into delightful bite-sized pieces. Serve immediately or store for later enjoyment.
