Ingredients

  • 4 cups plain popcorn air-popped or plain microwave popcorn, free of butter or excessive salt
  • 2 cups Lucky Charms cereal
  • 2 tablespoons unsalted butter
  • cups mini marshmallows
  • ¼ cup mint M&Ms
  • St. Patrick's Day sprinkles (themed, green, white, yellow)
  • Green candy melts or white chocolate with green food coloring and optional mint extract for alternative drizzle

Equipment

  • large baking sheet
  • wax paper
  • Very large bowl
  • medium saucepan
  • Silicone spatula

Method

Preparing Your Workspace
  1. First, line a large baking sheet with wax paper. This will prevent your delicious popcorn from sticking and make cleanup a breeze.
  2. Then, in a very large bowl, combine your plain popped popcorn and Lucky Charms cereal. Give them a gentle toss and set the bowl aside.
Melting the Marshmallow Coating
  1. Next, grab a medium saucepan. Over medium heat, melt the unsalted butter until it is completely liquid, which usually takes about 1 to 2 minutes.
  2. Once the butter is melted, add the mini marshmallows to the saucepan. Stir continuously for about 3 to 5 minutes until the marshmallows are completely melted and create a shimmering, gooey mixture. Immediately remove the saucepan from the heat to prevent the mixture from becoming too hard.
Coating the Popcorn
  1. Pour the warm, gooey marshmallow mixture over the popcorn and cereal in your large bowl. Using a silicone spatula, fold the mixture gently but thoroughly. Work quickly to ensure every piece of popcorn and cereal is beautifully coated with that sweet, buttery, and stretchy marshmallow goodness.
Adding the Festive Toppings
  1. Immediately pour the popcorn and cereal coated mixture onto your prepared baking sheet, spreading it out evenly. While it is still warm, immediately sprinkle the mint M&Ms and St. Patrick's Day sprinkles generously over the top. Allow this to set for about 10 to 15 minutes, until the marshmallow has slightly cooled but is still wonderfully tacky.
The Unique Green Drizzle
  1. While the popcorn mixture is still warm but the marshmallow has slightly cooled and remains tacky (after about 10-15 minutes of initial setting), gently drizzle your melted green candy melts (or tinted white chocolate with mint extract) over the entire surface of the popcorn. This vibrant green drizzle adds flavor, color, and acts as an edible 'glue' for your festive elements.
Setting and Enjoying
  1. Allow the Loaded Leprechaun Popcorn to set completely at room temperature for at least 1 to 2 hours, until firm enough to break into pieces without being overly sticky. Once firm, break it into delicious pieces and enjoy!
