1. Prepare Your Pan for Success
- First, grease a 9x9 inch pan thoroughly with cooking spray. For extra easy removal, line the pan with parchment paper, leaving an overhang on the sides. Set it aside.
2. Brown the Butter (Our Secret Twist!)
- In a large pot over medium heat, melt the unsalted butter. Continue to cook, stirring occasionally, until the butter turns a rich amber color and a nutty aroma fills the kitchen. You'll see tiny browned milk solids at the bottom.
3. Melt the Marshmallows
- Immediately after the butter is browned, add the entire bag of marshmallows and a pinch of salt to the pot. Stir constantly with a rubber spatula, scraping down the sides to prevent any burning. As soon as the marshmallows are just melted and smooth, remove the pot from the heat immediately. (This is also the perfect time to stir in vanilla extract if using).
4. Fold in the Lucky Charms
- Next, add the 5 1/2 cups of Lucky Charms cereal to the melted marshmallow mixture. Gently fold with your rubber spatula until the cereal is completely coated. Work quickly but gently to maintain the cereal's crispness.
5. Press into the Pan
- Spoon the sticky mixture into your prepared 9x9 pan. Lightly spray your rubber spatula or fingertips with cooking spray, then gently press the mixture down into an even layer. Avoid pressing too firmly, as this can make the treats dense.
6. Set and Cut
- Place the pan in the fridge to set for at least 20 minutes, or at room temperature for about 1 hour, until firm. Once set, use a sharp knife, lightly greased with cooking spray, to cut the treats into 12 even rectangles. Then, enjoy your magical, buttery treats!
