Ingredients

  • ¾ lb Carrots About 4 large, offering natural sweetness.
  • ¾ lb Asparagus Approximately 1 bundle, look for medium thickness.
  • 1 tbsp Avocado Oil For even coating and high heat roasting.
  • ½ tsp Sea Salt Enhances the natural flavors.
  • ¼ tsp Black Pepper Adds a touch of warmth.

Equipment

  • large baking sheet
  • Parchment Paper or Silicone Mat
  • Vegetable peeler (optional)
  • Sharp knife

Method

  1. Preheat your oven. Set it to 400°F (200°C). This high temperature ensures proper caramelization.
  2. Line your baking sheet. Use a silicone liner or parchment paper on a large baking sheet for easy cleanup.
  3. Prepare the vegetables. Wash both the carrots and asparagus thoroughly under cool water.
  4. Cut the carrots. Peel the carrots if you wish, then cut them lengthwise into thin sticks. Aim for quarters for medium carrots.
  5. Trim the asparagus. Snap off the woody ends of the asparagus spears. They naturally break at the correct spot.
  6. Combine on sheet. Place the prepped carrots and asparagus onto your lined baking sheet.
  7. Drizzle with oil. Pour 1 tablespoon of avocado oil evenly over the vegetables.
  8. Season generously. Sprinkle 1/2 teaspoon of sea salt and 1/4 teaspoon of black pepper over them.
  9. Toss to coat. Use your hands or tongs to toss the vegetables, ensuring they are thoroughly and evenly coated with oil and seasonings.
  10. Spread in single layer. Arrange the seasoned vegetables in a single layer on the baking sheet. Avoid overcrowding for best results.
  11. Initial roast. Bake for 15 minutes in the preheated oven.
  12. Rotate and continue. Carefully rotate the baking pan 180 degrees. This promotes even cooking.
  13. Final roast. Continue roasting for an additional 5-10 minutes, or until the vegetables are tender-crisp and slightly caramelized.
  14. Serve immediately. Enjoy your flavorful roasted asparagus & carrots fresh from the oven.

Notes

For best results, avoid overcrowding the baking sheet and ensure carrots and asparagus are cut into uniform sizes to promote even cooking. A high oven temperature of 400°F (200°C) is key for proper caramelization and a tender-crisp texture. Leftovers store well in an airtight container in the fridge for up to 4 days, or can be frozen.
Customize flavors by adding garlic powder, a touch of maple syrup, or finishing with fresh lemon zest and juice. Consider a sprinkle of Parmesan or fresh herbs like parsley for garnish.
