Ingredients
  

  • 16 oz cream cheese, at room temperature
  • 3.5 cups shredded sharp cheddar cheese, at room temperature
  • 1 oz ranch seasoning mix
  • 1.5 cups finely shredded jack cheese
  • 1 baby carrot
  • whole peppercorns (for decoration)

  • stand mixer or hand mixer
  • large mixing bowl
  • Rubber spatula
  • plastic wrap
  • serving platter

Method
 

  1. Allow both the cream cheese and shredded cheddar to come to room temperature for smooth blending.
  2. In a stand mixer with paddle attachment, combine cream cheese, cheddar, and ranch seasoning. Mix until smooth, scraping sides as needed.
  3. Divide mixture: shape ⅔ into a large ball (body) and ⅓ into a smaller ball (head).
  4. Wrap each cheese ball tightly in plastic wrap to shape and chill.
  5. Chill in refrigerator for at least 4 hours or overnight to firm up.
  6. Unwrap chilled balls. Coat both with finely shredded jack cheese for a snowy appearance.
  7. Place large cheese ball on platter, stack smaller one on top to form the snowman.
  8. Slice the tip of a baby carrot and press into head for the nose.
  9. Use peppercorns to form eyes, smile, and buttons. Press firmly to secure.
  10. Serve with crackers, pretzels, or veggies immediately after decorating.

Notes
